Cassava Bread Recipe

Ingredients

 Either

  • 2 tablespoons heavy cream
  • 1 heaping tablespoon of ghee

Or

  • 3 tablespoons of buttermilk

Instructions

  •  Preheat oven to 350 degrees F. Grease a 9x5 glass or stainless steel (do not use teflon) loaf pan with butter.
  •  In a medium mixing bowl, beat the eggs well. Add the white vinegar, honey, avocado oil, water either heavy cream and ghee or buttermilk to the bowl without mixing them in.
  •  In a large mixing bowl, whisk together cassava flour, salt, cream of tartar, whey protein and baking powder. Slowly add the bowl of wet ingredients to the larger bowl while stirring to combine. Break down any larger lumps.
  • Pour the cassava batter into the prepared loaf pan and place in preheated oven for 1 hour.
  • Remove from oven. Carefully remove bread from loaf pan and place on a cooling rack.
